    Recipes that freeze well

    I am trying to load my freezer for the winter months with quick meals that I can just defrost and enjoy. Does anyone have some tried and true recipes?

    I like to freeze soups, chili, and a hamburger/mac mix.

    Mmmm..... what a good idea!!!! I don't have any good ones off hand but I will have to find some! I really like that idea!

      I make soft shelled tacos (about 30-40) then put 4 in each freezer bag... I also make cheese, meat and cheese enchildas and do the same. Makes it alot easier when your in the mood for Mexican.

        Try taking spaghetti sauce and place it in ice cube trays, then freeze it... Then freeze your cooked pasta seperately... Do the same with meatballs, sausage, etc.

        Mix & match your pasta, sauce cubes and extras in a skillet and heat up! Tastes better than the day you made it!

            Yeah, just freeze the sauce, pop it out of the trays and put them in a ziplock bag and back in the freezer...

                Coq au Vin

                Finally dug into the recipe box and found one of my frozen favorites. Probably not traditional, but still tastes good. I think it came from Rachal Ray's program. Since we have many countries represented on SBM, maybe you can share your favorite national dish.

                Coq au Vin
                6 boneless chicken theighs cut into 1" cubes
                1 diced onion
                1 cup slivered raw carrots
                1 pint red wine
                1 small (16 oz?)can chicken stock
                1 tsp. dried thyme
                3 tsp. tomato paste
                1/3 cup crumbled crisp bacon
                1 cup sliced mushrooms
                4 cups cooked rice

                Fry onion in olive oil until tender. Add chicken and fry until partially cooked (about 5 min). Add wine, carrots, bacon, mushrooms, broth, and tomato paste. Simmer covered for one hour. Thicken slightly with 1 tbsp. corn starch mixed in water. Serve over rice.
                Freeze the coq au vin and the rice in separate individual-serving containers. Heat in micro and serve when ready.
