    Default WFD - June 12 2007

    So...
    whats for dinner?
    Dont be stingy neither...
    give up that recipe! I got a family to feed over here!

    I had seen on Rachel Ray a recipe with chicken and couscous. Had never HEARD of cous cous...

    Spent the last MONTH looking for couscous.

    I friend of mine found some in a grocery store about an HOUR from here, so of course now that I have couscous I dont have Rachels recipe. (love her btw!)

    Anyway...
    the fam, not cous cous fans.
    The kids picked out the chicken.
    The hubby ate the chicken, veggies, and maybe 2 spoons of his couscous. I was assked to not cook it again. But I gotta tell ya...

    I dove into that couscous like a starvin man who just found a fresh bowl of chocolate puddin! MAN, I AM STUFFED!!!!


    I made:
    Couscous Chicken Supper
    INGREDIENTS:
    1 medium yellow summer squash, chopped
    1 medium sweet red pepper, chopped
    1 medium green pepper, chopped
    1 teaspoon dried rosemary, crushed
    1/2 teaspoon salt
    1/4 teaspoon pepper
    4 tablespoons olive oil, divided
    1 pound boneless, skinless chicken breast halves
    2 garlic cloves, minced
    1 1/3 cups chicken broth
    1 tablespoon dried minced onion
    1 cup uncooked couscous

    DIRECTIONS:
    1.Place the squash and peppers in an ungreased 15-in. x 10-in. x 1-in. baking pan. Sprinkle with rosemary, salt and pepper. Drizzle with 2 tablespoons oil; gently stir to coat. Broil 4 in. from the heat for 10-15 minutes or until tender, stirring every 5 minutes.

    2.Meanwhile, in a large skillet, cook chicken and garlic in remaining oil until chicken juices run clear; remove and keep warm. Add broth and onion to the skillet; bring to a boil. Stir in couscous. Cover and remove from the heat; let stand for 5 minutes. Fluff with a fork. Cut chicken into strips. Serve with couscous and vegetables.

    Dinner tonight -simple again, I made a pasta salad.
    Rigatoni noodes
    tomatoes
    cucumbers
    green peppers
    olives
    hot peppers
    ham
    pepperoni
    sharp cheddar cheese
    Red wine dressing
    Was delicious!!!!! No burnt food tonite!!! And I do believe there is enough for tomorrow! But I am marinating shish kakbobs for tomorrow.


    Hey Bunny.. Love Rachael Ray toooo! Her dishes always look fantastic!
    I cant believe you never heard of couscous! lol

    well I hadnt, neither had my hubby!
    and when we asked at the grocery store they hadnt EITHER!!!!

    My friend WORKS at Kroger here and knew what it was, but our Kroger didnt sell it. So when she went to the Evansville store to drop off some papers, they had some and she bought it for me.

    I liked it. Could probably eat it by itself. but nobody else here did. LOL...

    poor me!

    I love RR and the Itallien pretty girl on food network.. Gieda or something like that.. (my hubby even watches her, though I doubt he's watching her cook, lol)

    Its kind of like rice, or maybe a pasta...
    about half the size of a rice or a bit smaller.

    I adore couscous but can't cook it to save my life.

    Well we decided to all eat the same thing tonight [a rarity in our house due to Amy who hates anything with a sauce and Tom being allergic to anything poultry].

    Recipe as follows:
    Bread, slices x 2
    Peanut butter
    Grape Jelly

    Yep you guessed it PBnJs ...... Yummy.

    I love the food network and Ive heard them mention couscous but I had no idea what it was...or even if we have it in the stores here..will have to check that out..for supper last night we had bbq pork, baked beans and potatoe salad..my mom bought it for us at The Pit since we can't wash dishes and have no clean ones...she got paper plates too...thanks Mom..
    Ya'll make me sooo hungry...the chicken and the salad sound so good..muma your PB&J sound good right now too...may have to go make me one..since its 2 am and Im wide awake..

    Love couscous---I have a recipe that you put butternut squash with it. Yummy! All these recipes. You girls should be putting these on layouts and add them to the May Mid-month challenge. It doesn't stop till June's comes out.
